YEAR OF THE DOG / 2018

Chinese New Year is celebrated at the beginning of the lunar year in keeping with the traditional zodiac series of 12 animals. We developed a bespoke tasting menu for 2018, the year of the dog, that explores different Chinese New Year traditions from regional and overseas Chinese communities.​​​​​​​

The menu is designed as an accordion, with pages that unfold to reveal each of the 8 courses over time. 8 is considered an auspicious number as it is a homonym for prosperity in Cantonese. A red packet is built into the back of each menu, containing a final surprise for guests to take home.



STAGE I: TOGETHERNESS
The Tray of Togetherness has been a part of Chinese New Year celebrations for centuries
Lotus root, candied coconut, rabbit sweets, pineapple pastries, lotus seeds, sesame cookies

STAGE II: HONESTY, TRANSPARENCY, SIMPLICITY
A Dog’s Dinner celebrating associated characteristics: honesty, transparency and simplicity
Pomelo and pear jelly, five-spice braised tofu, white miso-poached Nashi pear

STAGE III: PROSPERITY
A Singaporean tradition preceding Instagrammable breakfast bowls
Yusheng: mackerel ceviche, smoked carrot, pickled cucumber, fresh mooli, crushed peanut brittle

STAGE IV: HEALTH, LONGEVITY
Uncut noodles represent long life, inspired by ramen and molecular gastronomy
Szechuan jelly noodles, prosecco soy tare, cucumber gazpacho, topped with shimeji and fresh herbs

Vegetarianism at the start of the year was thought to be self-purifying
Luo han zhai: hotpot of Napa cabbage, glass noodles, bamboo shoots, assorted mushrooms

STAGE V
Tangerines are a symbol of wealth
Yunnan pu erh tea, aged in tangerine peel

STAGE VI: FAMILY, UNITY
Also known as Four Joy meatballs, exuding power and strength
Lion’s head meatballs: pork and beef mince, quail eggs, boy choy, rice wine sauce

Phoenix and dragon: two mythical creatures combined to represent a powerful match
Crispy skin pork, tea-smoked duck, braised firm tofu

STAGE VII: WEALTH, ABUNDANCE
Ingot-shaped treasures inspired by a pickling workshop
Pork, prawn and kimchi dumplings

Served head-to-tail to represent abundance for another year ahead
Salt-baked catch of the day, whole

STAGE VIII: SWEETNESS, JOY
Pineapple sounds like the arrival of prosperity in several Chinese dialects
Pineapple tart, walnut crumb, amaretto, spun sugar nest

Return to the tangerine for a golden, fruity finish
Tangerine macaron, tangerine ganache, peanut powder
